Crispy Oven Roasted Zucchini!

So today I bring you a super quick and easy (and healthy!) side dish. It took me literally 2 minutes to prep these and stick them in the oven, and it's only a 20 minute bake time. You could use this same method with ANY veggie really, but I used zucchini because (if you're coming late to the program...) I'm obsessed with it. 

This is my favorite combo of spices, you can skip the cayenne if you don't like spicy or add whatever your fave spices are. The recipe is super versatile, and super yummy!

Ingredients: (I used 1 zucchini because it was just for me, if you're cooking for more than one at least double the recipe!)
1 zucchini, rinsed and chopped
1/2 Tbsp. olive oil
1/4 tsp. cayenne pepper
1/2 tsp. paprika
1/2 tsp. chili powder
1/2 tsp. kosher salt
1/4 tsp. cracked black pepper

Step 1: Pre-heat oven to 425 degrees fahrenheit. Toss chopped zucchini with olive oil to coat all the pieces fully.

Step 2: Add cayenne, paprika, chili powder, salt, and pepper to zucchini and toss to coat.

Step 3: Spread on a baking sheet covered in aluminum foil and sprayed with cooking spray in an even layer. Bake for 20 minutes, flipping once at half time.
