I used "Enjoy Life" mini chocolate chips, they are gluten-free, dairy-free, nut-free little bundles of joy. I was lucky enough to find them at my local grocery store- but if you can't I found them here on Amazon: http://www.amazon.com/Enjoy-Life-Semi-Sweet-Chocolate-10-Ounce/dp/B000HDJZWO/ref=sr_1_1?ie=UTF8&qid=1348949350&sr=8-1&keywords=enjoy+life+mini+chocolate+chips seriously go read the reviews on there- these chips are the bomb. PS: In my pictures I halved the recipe because I didn't need 8 muffins laying around the house when I would need to eat them all by Monday. So I just made 4. The full recipe will make you about 8 muffins. :-)
Ingredients:
1 Cup Almond Flour
1 Cup Pumpkin Puree (make sure it's 100% pumpkin)
1/4 Cup nut butter (I used peanut butter, any nut butter will do!)
1/4 Cup Honey
2 Eggs
1 tsp. Baking Powder
1 tsp. Cinnamon
1/2 tsp. Salt
1/4 Cup Enjoy Life Mini Chocolate Chips

Step 2: Fold in chocolate chips and stir to combine.
Batter will be thick, that's okay! |

ReplyDeleteDeena- I would start with a 12 min cook time and go from there, just keep an eye on them to make sure they don't burn! If you try it let me know the results :) good luck!
