Balsamic- Mustard Chicken!

Let's talk about chicken. I've mentioned this to you before, but I'll re-iterate for those who are new :) I eat chicken every. single. day. Usually more than once a day. It's my main source of protein, because meat really kinda freaks me out. I'm slowly starting to get over this, but chicken has remained my steadfast friend in the process. So making chicken new and interesting to me is a big deal. The other day as I was looking for Whole 30 friendly chicken dishes I came across this one on EveryDay Paleo (another blog I'm obsessed with, check them out): http://everydaypaleo.com/2012/03/12/budget-friendly-balsamic-mustard-chicken-and-oven-roasted-bacon-veggies-by-erika/#more-4036 I was immediately sold, Balsamic & Spicy mustard? Yes, please.

My instincts were correct, this chicken is uhhhh-mazing. It is so full of flavor & it's really easy! You probably have everything you need to make it on hand :-)

K back to the chicken,

Ingredients:
4 thinly sliced boneless, skinless chicken breasts (or 2 sliced in half)
1/4 cup balsamic vinegar
1/4 cup olive oil
3 cloves garlic, minced
2 1/2 tablespoons spicy brown mustard
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Step 1: Whisk together vineger, oil, garlic, mustard, salt, & pepper until fully combined.
Step 2: Place chicken breasts in a gallon sized ziploc bag and pour prepared marinade over chicken. Close top tightly and make sure the chicken is fully coated. Let marinate in the fridge for atleast 2 hours (I marinated mine for about 4).
Step 3: Heat a non-stick skillet on medium high heat. Cook chicken breasts 4-5 minutes per side or until cooked through.
ENJOY! I had mine with my Sweet & Spicy Sweet Potato Wedges! (minus the brown sugar)
