Buffalo Chicken Bites!

These are seriously so addicting. And fantastic. And a little bit spicy, but the perfect amount. Oh yeah, PS: they're low-cal and a super good snack that you can FEEL GOOD about eating :-) How does that sound? Well, it tastes even better.
See how crispy they come out? But we don't fry these babies, we bake them! And you still get that delicious crunch. By using wonton wrappers you give yourself a lot of options here, they're a really easy base to work with you've just got to used to them. And each wonton wrapper clocks in at only 20 calories. Nice. You can find them in your produce section in the little refrigerated area. Don't be intimidated if you've never used them, like I said super easy! It does take a little time to put these all together, but the effort is so worth it in the end. I think they kind of look like little Totino's pizza rolls- except filled with buffalo goodness not all of those fake preservatives (sorry Totino's!).

With football season right around the corner (YESSS!) these make the perfect party snack. Just make sure you have enough for all the hungry fans- they go fast ;)

Ingredients: (Mine made about 20 bites)
1 C. Cooked, Shredded Chicken
1/2- 2/3 C. Frank's Red Hot Sauce (Depending on how spicy you want it!)
1/2 C. Crumbled Blue Cheese
Won Ton Wrappers
Bowl of water to dip your fingers in for the wonton wrappers
Optional: Ranch or Blue Cheese dressing for dipping
Step 1: Combine Shredded Chicken and Frank's Red Hot sauce until combined. Preheat oven to 400 degrees.
Step 2: Set yourself up a little wonton rolling area, I used a sheet of aluminum foil. Take out your first wonton and lay flat.
Top with about 1 Tbsp. of the chicken mixure, and about 1 tsp. of blue cheese.
Now, fold the top over the mixture, then wet the bottom with your water, fold the bottom over the top and smooth with water to close, wet and fold the left side over and smooth, wet and fold the right side and smooth. If you mess up at any point just add more water and smooth over- the wrappers are very pliable and respond well to the water!
It will take a couple of wontons for you to get used to them, but once you do the process will move along much faster! This is the result:

Step 3: Finish with the remaining wontons and place in a pan lined with aluminum foil and sprayed with non-stick spray. Spray the tops of the buffalo bites with non-stick spray (this will help them crisp up!).
Step 4: Bake for about 20 minutes or until they are crispy and golden brown.
Let rest a couple of minutes (The filling will be very hot!) and serve with desired dressing. Enjoy!

  2. I saw a taco chicken on pinterest that you make in the crockpot. 2lbs of chicken, a packet of taco season and 2 cups salsa. Add that to a little cheddar or taco cheese in these and I bet it would be amazing:) Mini tacos

    1. MMM!! Didn't consider the Mexican route, but that sounds delish. Mini tacos sound amaaaaaaazing! Maybe with like sour cream, salsa, guac, and cheese dip on the side for dipping? Sounds adorable. Gonna try! Thanks for stopping by :-)

  3. I haven't tried these yet but sound very good. As another note, how about melting just a little butter and add some of the buffalo sauce to it and brush it on the tops of the bites. The butter will help to crisp them up and the outside will have a touch of the buffalo flavor too!
